I am able to make these chocolate chip cookies for the missionaries due to the thoughtfulness and generosity of one of our missionaries from the CLAM (California Los Angeles Mission), Hyrum Wright. Hyrum came to visit us about a year ago and before coming he asked me if there was anything he could bring us from the states. I told him if he had room I would love some chocolate chips and brown sugar. He said he and his wife cracked up over that. :) Anyway. . . . he did bring them and we were so grateful. The brown sugar here is not refined and it is quite coarse and doesn't have quite the same flavor as that of the U.S. You can buy very tiny chocolate chips, but only in milk chocolate and not semi-sweet. Well, several months later we got a package in the mail and here was a huge box with some more brown sugar and chocolate chips. We just couldn't believe it!!! Again, several months later, just as we had used all of that up, another miracle occurred. We received another big box of replenishments in the mail! What a guy! So. . . . . this is about our fourth batch with the latest replenishments. When this runs out it will have to be brownies and snickerdoodles.I also need to thank our sweet daughter-in-law, Jodi, as well. When we were very new in the MTC, she also sent us brown sugar and chocolate chips and we love her for doing that. We made several batches that were due to her generosity as well.
I also can't forget our dear friends, the Hooks and the Wittwers, who served here with PEF, but have completed their missions and are back in St. George now. They, too, have contributed to the cause with Toll House and C & H. Also a very special lady, Liz Cowen, served before we were ever here and left before we got the chance to meet her, but she brought her sons here to visit Africa and she came to meet me and what did she bring????? You guessed it!
That story was just a little too long. . . . . . . . but, I just kept remembering all the wonderful people who have contributed to these missionaries being able to have good ole' chocolate chip cookies. :) Thanks to all of you!
How funny, because chocolate chips (the semi-sweet variety) were the one thing we couldn't find in Trinidad despite searching for four months! When we moved to Guyana, we were introduced to what everyone around here refers to as "Little CostCo" . . . and guess what, they had those giant bags of chocolate chips.
